Measurements

Many westerners worry about measuring out ingredients almost to the nearest 1/10 th. of a gram. Curry cooking should be an adventure. So, don't follow the recipe to the absolute letter. Allow yourself a bit of artistic licence. If you have not got one of the ingredients listed in a recipe, then try and find some alternative or even leave it out this time and get some for next time.

= dollop = about the size of

a small to medium sized onion, if

frying onion a blob of ghee will

be enough to do a small to medium

sized onion.


pinch

= that amount of powder or salt trapped between thumb and forefinger.
