8oz Leaf Spinach (Frozen will do)
1 Large Onion - sliced
1/2 cup of cooking oil or Ghee
Big tin Tomatoes
1 tsp Mustard Seed
2 tsp Haldi
2 tsp Chilli powder
2 tsp Paprika
3 Teaspoons Dhania Powder (Coriander)
3 tsp Salt
Red and Green Peppers
Fry onion in oil or ghee with mustard seed until very brown.
Add rest of spices with 2 tbsp water and cook for a few minutes.
Put in potatoes and fry. put in the tomatoes and mix, then add
the courgettes, spinach and green peppers. Add 1/2 cup of water.
Cook until thepotatoes are soft. Alternatively bung it in the
pressure cooker for 5 minutes.
